I absolutely love to bake. It's most definitely in my top five of self-care practices.  My husband never complains when I practice this form of self-care, ha! Having small kiddos means I'm never lacking a 'helper', however one of the stipulations of it falling under the category of 'self care' is that I must do it alone, ha! Last night the kids made cookies & my memory is fresh on why I must go it alone! Not to say they aren't helping me most of the time in the kitchen.

We are homeschoolers & I think baking is an extremely important part of learning composition. Plus, it teaches us that hard work has its rewards!

This recipe is the culmination of requests from my husband & the simplest ingredient recipe I was able to find on Pinterest. I use frozen whole cherries from Trader Joe's (see image below) & .

1 stick of butter

1 cup of sugar

2 eggs

1 t vanilla

1/2 bag frozen cherries

1 & 3/4 cup flour

1 t salt

1/2 t baking powder



On most occasions, we like to mix up the dry & the wet ingredients separately. It leaves each kid with one job & I'd like to think it's also how the professionals do it, lol. So I'll combine the flour, baking powder, salt & sift with a fork & set aside.

In a separate mixing bowl I'll combine the stick of butter & sugar using a pastry cutter. I then slowly mix in the eggs & vanilla & then the dry ingredients. I'll combine until it looks like a thicker cake batter.

I use an 8 x 8 Pyrex glass pan & once it's greased, I'll spread 1/2 of the mix onto the bottom. Next, I'll pour the drained cherries on top & then distribute the remainder of the batter.  We only use 1/2 the bag of cherries & blueberries are a great substitute.  

I'll bake it at 350 degrees for 60 minutes. It's best served a la mode & always with coffee.

I'm discovering what fuels me & I encourage you to find your fuel too. I'm a big advocate on healthy eating but also indulging in the sweetness of life! It's my adopted form of moderation & I truly believe coffee & food are a universal love language & bring people together. So why not embrace the togetherness with some cherry cake a la mode!  Enjoy!
